Wanton Noodle Soup

Instructions

(1) Make the Wontons Mix pork, green onion, soy sauce, sesame oil, and pepper. Place a small spoonful in a wonton wrapper, seal with water, and set aside.

(2) Prepare the Soup Heat chicken broth with ginger and soy sauce. Simmer for 10 minutes. Season with salt and pepper.

(3) Cook the Wontons and Noodles Boil water, cook wontons for 3-5 minutes (until they float). Remove. In the same water, cook noodles (20-28secs+/-). Blanch bok choy for 30 seconds.

(4) Assemble the Bowl Divide noodles into bowls, add wontons, and pour hot broth over. Garnish with bok choy and chopped green onions.

Char Siew Wanton Noodle Dry

Instructions

(1) Marinate the Pork: Mix hoisin sauce, soy sauce, oyster sauce, honey, sugar, five-spice powder, Chinese cooking wine, sesame oil, and garlic. Coat the pork with the marinade, cover, and refrigerate for at least 2 hours or overnight

(2) Cook the Pork: Preheat the oven to 200°C (400°F). Roast the pork on a wire rack for 25-30 minutes, basting occasionally with leftover marinade. For a caramelized glaze, broil for 2-3 minutes. Slice into thin pieces and set aside.

(3) Mix pork, green onion, soy sauce, sesame oil, and white pepper.

(4) Place a teaspoon of filling on a wonton wrapper. Fold and seal with water.

(5) Boil wontons for 3-5 minutes until they float. Remove and set aside.

(6) Cook the Noodles Boil the egg noodles for 1-2 minutes until tender but firm. Drain and rinse under cold water, then toss with a little sesame oil to prevent sticking.

(7) Make the Sauce Mix soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and sambal chili (if using).

(8) Toss the cooked noodles in the sauce until evenly coated.

(9) Assemble the Dish: Divide the sauced noodles onto plates. Top with slices of char siu and cooked wontons. Add blanched bok choy or Chinese broccoli on the side. Garnish with green onions, fried shallots, and additional green pickled chili or sambal, if desired.
