Wanton Noodle Soup

Ingredients

  • 1/2 lb ground pork (or shrimp, optional)
  • 1 green onion, chopped
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1/4 tsp white pepper
  • Wonton wrappers
  • 4 cups chicken broth (store-bought or homemade)
  • 2 slices ginger
  • 1 tbsp soy sauce
  • Salt and pepper, to taste
  • 200g egg noodles (thin wonton noodles) (serves 2-3 pax)
  • Bok choy or Chye Sim
  • Green onions, chopped (for garnish)

Instructions

  • Make the Wontons Mix pork, green onion, soy sauce, sesame oil, and pepper. Place a small spoonful in a wonton wrapper, seal with water, and set aside.
  • Prepare the Soup Heat chicken broth with ginger and soy sauce. Simmer for 10 minutes. Season with salt and pepper.
  • Cook the Wontons and Noodles Boil water, cook wontons for 3-5 minutes (until they float). Remove. In the same water, cook noodles (20-28secs+/-). Blanch bok choy for 30 seconds.
  • Assemble the Bowl Divide noodles into bowls, add wontons, and pour hot broth over. Garnish with bok choy and chopped green onions.
